The Spanish potato omlette is a very popular dish all over the world. Today Memsaab brings you a desi vegetarian version of this recipe. We will make the potato omlette without using any eggs!
Ingredients: We will need 4 boiled potatoes, 1 onion, 1/2 cup besan, 1/2 cup milk, ginger garlic paste, olive oil and salt/pepper. You may also use fresh coriander or mint for garnishing.
Method: To begin, crumble the potatoes and finely chop the onions.
In a large bowl, whisk together the besan and a little water till there are no lumps. Add in all the other ingredients and whisk together. The aloo omlette mix is now ready.
Heat a pan and smear some olive oil on it. Pour the omlette mix and allow to cook on low flame for 10 minutes. Keep covered with a lid while the omlette cooks. Flip it over after 10 minutes and cook the other side.
Serve hot garnished with fresh herbs and with pudina chutney on the side. Enjoy!
