If you are craving some Mughlai food, try this vegetarian kofta dish tonight. These kofta are made from lauki and other ingredients found in every Indian kitchen!

Lauki Kofta Recipe

Ingredients: 1 cup grated lauki, 2 tbsp corn flour, 1 finely chopped onion, 2 large tomatoes, finely chopped ginger, 5 cashews, salt, turmeric and spices to taste.

Method: In a large bowl, mix the grated lauki, corn flour, a spoon of oil, salt and pices to taste. Make small balls and keep aside. You may fry these balls in hot oil or you may shallow fry them on a appe pan. Keep the cooked balls aside.

Now make the gravy for your koftas. Start by soaking the cashews in warm water for 10 minutes.

Make a paste in the grinder using onion, cashews and ginger. In a hot pan, add some oil and fry a spoon of cumin seeds. Now add in the onion paste and cook. When the onion paste begins to turn pinkish brown, add in the chopped (or paste) tomatoes. Cook for another 7 minutes. 

Now add in salt, turmeric and other spices. The gravy is ready. Add in the koftas and turn the stove off. Serve garnished with fresh coriander.
