Spicy Snack In 5 Minutes

A decade ago, if someone told me I could cook a dish in just 5 minutes, I wouldn’t believe it. But the hunble microwave has now made it possible. So all you working mummies out there, do not worry if you don’t have much time to rstle up yummy snacks for your kids and families. With the microwave (and with our recipes) you should be able to manage it within minutes! Here’s an example:

Stuffed Baked Potato

Ingredients

6 large potatoes
2 cups sweet corn, boiled
2 tbsp butter
2-3 green chillies , finely chopped
4 tbsp grated processed cheese
4 tbsp chopped onions
Green coriander, chopped – for garnishing
salt, lemon and masala to taste

Method

1.Prepare the potatoes for the microwave. Wash and prick them with a fork. Now microwave on high for 5 minutes.
2.Scoop out the middle of each potato and place the sheels in a microwave safe bowl.
3.In another glass bowl, microwave and melt the butter.
4.Prepare the stuffing by adding the ingredients to this butter and microwave for 2 minutes. Mix it all well.
5.Now fill this mixture  into the pocket of each potato. Spinkle grated cheese and microwave the potatoes for a minute.
6.Garnish with coriander and serve hot with mint chutney.
