It is no secret that Chinese cuisine is a big hit with India. Although we don’t really know authentic Chinese cuisine, we all love what’s called desi Chinese – our own Indianized version of Chinese food. One such very popular desi Chinese dish is Vegetarian Manchurian. It is served at parties and also at weddings. It is our go to food whenever we think Chinese! So here is a quick recipe for you to make your own version at home!
Ingredients: You will need assorted vegetables, corn flour and maida for making the balls, and oil for frying. You will require onions, garlic, ginger, green onions, corn flour, vinegar, chilli sauce, soy sauce and ketchup for the gravy. You will also need green chillies/seasonings as per taste.
We will start by making the mixture for Manchurian balls. Finely chop or grate the vegetables you have. You can use carrots, beans, cauliflower, capsicum, cabbage, bell peppers etc. Add 3 tbsp corn flour and 2 tbsp maida to the mix. Add salt and seasoning and give it a good mix, add a little water to make a thick mix.
Make small balls and fry on medium heat. Keep the balls aside.
To make the gravy, heat a little oil in a pan. Now add in finely chopped garlic 3 tbsp and 2 tbsp finely chopped ginger. Fry this for 2 minutes. Now add in chopped chunky onions and fry for another minute. Add in a tbsp of finely chopped green chillies and fry a little more.
Now is time to add in the sauces. Add in 1 tsp soy sauce, 1 tsp vinegar, 2 tbsp chilli sauce and 2 tbsp tomato ketchup. Now add in the corn flour mix, using 3 tbsp cornflour and a little water. Stir this mix continuously so that it does not get lumpy.
Season the gravy with salt, pepper etc. Add in the fried balls and add water if required. Turn off the heat when the gravy reaches desired consistency. Serve hot, garnished with chopped onion greens and coriander.
