Poha is a great breakfast dish. It is quick and easy to prepare. It gives you a healthy dose of energy in the morning and you can make your own variations as you like. Poha is considered to be healthier than rice. As you know, white rice is very processed and polished. But Poha is relatively unprocessed and therefore much healthier.

If you would like to try Poha, try this Maharashtrian recipe.

Ingredients: Poha, mustard seeds, cumin seeds, lemon, finely chopped onions, curry leaves, crushed ginger, chopped green chillies, turmeric, spices and coriander.

Method: In a colander, wash the poha and keep the wet poha aside for 10 minutes.

Now in a large pan, heat a little oil and add to it cumin and mustard seeds. When the seeds begin to splutter, add in finely chopped onions. This recipe tastes much better if you use a large quantity of onions.

When the onions begin to brown, add in crushed ginger and finely chopped green chillies. Now is the time to add in turmeric and cook for a minute. 

Add in the soaked poha, salt and spices to taste. Mix up everything, add a dash of lemon juice and serve hot. Garnish with fresh coriander.

If you wish to add a twist of protein to your poha, you can add peanuts, peas, boiled chickpeas, or boiled black beans to make it even more healthy!
