We all love a side of achar on our plate, no matter what kind of food we eat. Some people eat achar even with pasta and noodles! Our love for achar is limitless but unfortunately the achar sold in stores is usually full of oil. This oily achar is not good for the health. It increases the cholestrol and piles on the kilos! The extra oil also causes sore throat in some people.

So here is an easy alternative that you can make yourself at home!

Nimbu-Adrak-Mirch achar

To make this achar, buy fresh lemons, ginger and green chillies. Make sure these items are fresh and there are no dark patches or spots. Wash the produce properly, then spread it our on paper towels to dry.

Once the moisture has dried off completely, prepare the produce for making the achar. The lemons need to be cut into smaller pieces. The ginger should be peeled and sliced. The green chillies need to be de-headed. If the chillies are too big, you may slice them into 2 halves.

Now in a large bowl, mix all the items. Pour a generous amount of salt over these items. Squeeze out the juice of some lemon pieces. Add in a little sugar. 

Transfer to your glass jar and close the lid. Now keep this jar in a warm sunny spot for a day or two. Shake the jar every few hour and mix up the contents.

Your achar is ready! Consume within 10 days. If you wish to extend the life of this achar, keep it in the fridge. Enjoy!
