Most people in India enjoy a mixed vegetable dish made of cauliflower, peas, potatoes, carrots, brinjals and paneer. But Aviyal is a unique mixed vegetable dish from Kerala that is completely different from our usual mixed vegetable dishes. It is simple, easy and very tasty with many flavours to excite the senses. Here is how Aviyal is made.
Ingredients: We will use different vegetables like raw bananas (plantains), drumsticks, snake gourd, beans, pumpkin, bottle gourd and carrots. We will also need grated coconut, jeera, curry leaves, yogurt and spices to taste.
We will start by peeling and chopping all vegetables in a longish shape like French fries.
Now in a large pan, start cooking the harder vegetables first. Add in salt and turmeric and a cup of water. Cover and allow to cook for 10 minutes.
As these vegetables cook, we will prepare our coconut masala. Grind the grated coconut with jeera and water to make a thick paste and keep aside.
Now add the remaining vegetables to our cooking pan and cook for another 10-15 minutes. We want the vegetables to be cooked but not over-cooked or mushy.
When the vegetables are cooked, add in your coconut masala, yogurt and the fresh curry leaves. Stir and turn off the flame after a few minutes. Keep covered and allow the vegetables to absorb all the flavours.
Your flavorful Aviyal is ready! Enjoy with rice and sambhar.
