As cold winter days dawn upon us, the thirst for cool drinks is replaced by a hunger for warm comfort foods. We long to eat calorie rich foods that are fried, sweet or creamy! So today we bring you a recipe that will satisfy these cravings without piling on the calories. 

Creamy Cauliflower Soup

Ingredients: 1 small caulifower, 1 small onion, 2 cloves of garlic, 1 tbsp butter or 8 cashews, salt, pepper, fresh herbs like mint or coriander or chives.

Method: Start by washing and chopping the cauliflower into small pieces. Now roast the cauliflower in the oven or in a pan on the stove. Keep aside when it starts to brown at the corners.

Now in a big pan, heat up a tp of oil and start to cook the finely chopped onion and garlic.

When the onions begin to brown, add in the roasted cauliflower. Now add in water or vegetable stock and allow to simmer for a few minutes.

Now is the time to add in the butter or cashews if you don't want to add in the butter. If you are using cashews, they should be soaked for 2 hours before use.

Now using a hand blender, blend the soup mixture to a thick creamy paste.

Season the soup with salt and pepper. Add in a dash of lemon juice if you prefer the taste.

Garnish with finely chopped fresh herb of choice and serve hot!
