Hasselback Potatoes Recipe
Ingredients: 4-5 large potatoes, butter, olive oil, garlic, Mozarella and coriander/parsley.
Method: In a bowl, mix together finely chopped or grated garlic, 2 tbsp olive oil and 2 tbsp melted butter.
Now peel the potatoes and wash them nicely. Start slicing them one by one. When you make the cuts, remember to not cut completely through the potato. You have to make cuts from one end of the potato to the other, but without making any slices. So your slices should remain joined at one end.
When all potatoes are prepared, brush them with the butter-oil-garlic mix. Sprinkle salt and place on a baking tray in a preheated oven. You now have around 15-20 minutes to do other chores o relax!
When the ends of slices start browing a little (approx 15-20 minutes), take the tray out. Now brush with the oil-butter-garlic mix once again. Sprinkle pepper if you like. Sprinkle grated cheese all over and place the tray back in the oven. You have another 25 minutes to do other things as the potatoes cook to perfection.
Your Hasselback potatoes will be ready in 25 minutes. The dish will turn out crispy on the outside but soft and tender on the inside. Garnish with chopped herbs and enjoy hot!
This can be served as a side with your favorite pasta dish, or as an evening snack for your family.
