3 Variations of Raita to Try This Summer

If your family is bored of eating boondi raita or onion-tomato raita every day, we bring you 3 different variations to try this season. You can even have your children help you make these raitas and enjoy fun family cooking time! These can be enjoyed with pulao, biryani or roti and sabzi.

1. Fruit Raita: You must have tried this on weddings and probably enjoyed the sweet rich taste. But most people never try making this raita at home! The trick to making a great fruit raita is to use pineapply that is ripe. Use thick curd and sweeten it a little with sugar. Season with salt and your choice of pepper. Add in chopped pineapple and pomegrante seeds. Finely chopped mint leaves will take this to another level.

2. Lauki Raita: Finely grated lauki should be first boiled in water. Drain the water and kaap the cooked lauki aside to cool down. Whisk the curd and season it with with salt and pepper. Add in the lauki when it has cooled down completely. Add in some roasted jeera powder for taste and serve chilled. Your kids will eat rice or roti with just this raita and nothing else!

3. Baingan Raita: Most kids will turn up their nose at the sight of an eggplant. But they will change their mind about the vegetable after they eat this raita. Roast baingan the same way as you roast it for making bharta. Peel off the burn skin and wash it properly after the roasted eggplant has cooled down. Now mash it and add into whisked fresh curds. Season with salt and pepper. Garnish with fresh coriander and enjoy!

Apart from these 3, you can also try cucumber raita, onion-mint raita and aloo ka raita. A different raita for each ay of the week!
