Everyone loves South Indian food. But most people in North India think that preparing their favorite dosa, idli, vada or sambhar is very difficult. But the fact is that most South Indian families cook this food on a daily basis. They don't only make their own Sambhar every day, they even make their own Sambhar masala! The best thing about making your own Sambhar masala or Sambhar powder is that you can adjust the ingredients according to your own taste. Once you have made your own masala, you can alter the proportions of all ingredients the next time to suit your taste better. How to Make Sambhar Masala?
The process is really easy, provided you have all the ingredients in your pantry. It will not take more than 15 minutes to make a whole batch!
Ingredients: 2 tbsp Cumin seeds, 1/2 cup coriander seeds, 1.5 tsp methi seeds, 15 dry whole red chillies, 1 tbsp peppercorns, 2 tbsp chana dal, 1 tbsp split urad dal, 1/2 cup curry leaves, 1/2 tbsp mustard seeds, 1/2 tbsp hing and 1/2 tbsp haldi.
Once you have assembled all the ingredients, it is time to start dry roasting them. Each masala item needs to be rasted individually, till it becomes aromatic and/or changes color. Make sure you do not burn any item. Dry roast all items except the last 2 and keep aside in a plate. Turn off the stove. Now roast the hing in the still-hot pan without turning on the stove. Keep aside. Haldi need not be roasted at all.
Now grind all the ingredients together into your home-made aromatic sambhar masala! Store in an air tight container and enjoy all the compliments...
