Achari Aloo ki Sabzi Recipe
Ingredients: 4 medium sized potatoes, whole spices (whole dried chillies, cumin seeds, fennel seeds, mustard seeds and onion seeds), asafoetida, oil and seasonings including turmeric.
Method: Start by boiling the potatoes. When done, peel and dice the potatoes.
In a pan, heat up some oil for tadka. When the oil is hot, add in all the whole spices and hing. Be generous with the whole spices if you really want the achari taste. When you hear the mustard seeds spluttering, add a little turmeric and then add in the diced potatoes.
Now quickly season with salt, chilly powder and amchoor etc.
Garnish with fresh coriander and serve with hot puris. Enjoy!
