As the world celebrated Idli Day, here is a healthy variation of India's favorite breakfast!
Start by dry roasting a cup of oats till they turn brownish. Transfer to a plate and roast a spoonful of chana dal, a spoon of mustard seeds and curry leaves.
Now grind oats in a grinder and transfer to a big bowl. Add the roasted dal, mustard seeds and curry leaves. Add a pinch of asafoetida and a tsp of baking soda.
Now add in sour curd and stir to thick batter consistency. Season with salt, and throw in mixed vegetables chopped finely.
Now grease idli plates, pour in the batter and steam for 12-15 minutes.
Hot and healthy oats idlis are ready! Serve hot with sambhar and chutney...
