Crispy Pakodas: the Best Companion for Your Chai

There are 2 things every Indian years for when it rains - chai and pakodas! As monsoon makes everything wet, green and beautiful, you can hear the frying sounds come from every kicthen in India - we all love to fry and eat crispy bhajias in the rain! So today we bring you a quick pakoda recipe, one you can make even after a long day at work.

Quick Crispy Bhajia Recipe

Put your kadai on the stove and turn on the flame. Pour a generous quantity of oil in the kadai and start prepping your pakoda mix.

Start by thinkly slicing 2 onons. Finely chop one potato. Chop up some spinach leaves. Finely chop some green chillies. 

Now make the batter by mixing 1 cup besan with a little water. Add very little water in the beginning, slowly add more as you stir. This will help in avoiding lumps.

Mix the chopped vegetables with the besan batter. Add salt, chilly powder and amchoor powder to taste.

Your pakoda mix is ready. Test the oil by dropping a tiny bit of the batter into the oil. If it comes up immediately, the oil is hot enough.

Now slowly drop spoonfuls of the batter mix into the hot oil and fry them evenly bt turning them over a few times. Take out and place on a kitchen towel. Similarly fry the rest of your pakodas.
