How to Make Banana Cranberry Muffins (Recipe for 12 muffins)
Ingredients: 3 ripe bananas, 1 egg, 2/3 cup sugar, 11/2 cup flour, 2 tbsp refined oil, 1 cup crnberries (frozen or dried), 1 tsp baking soda, 1 tsp baking powder, 1 tsp vanilla extract and a pinch of salt.
Preheat oven to 350 F or 175 C.
Line your muffin tray with paper liners or grease with oil.
Mash bananas in a bowl, add powderd sugar and mix well. Now add in 1 beaten egg and 1 tsp vanilla extract. Mix everything well together.
In another bowl, mix the flour, baking soda, baking powder and salt. After mixing these dry ingredients well, add them to the bana-egg mix and mix everything till it all blends together. Now fold in the oil and cranberries. Your muffin mix is ready.
Pour this mix into prepared muffin tray. Pour in 3/4 of each muffin cup as the muffin needs space to rise.
Place the tray into preheated oven and let it bake for around 25 minutes. Test with a toothpick to see if muffins have cooked through or not.Bake for another 3-5 minutes if required.
Serve with hot coffee!
