Egg Salad: A Quick, Easy and Healthy Lunch

If you are a working woman, you know there's not much time to cook elaborate meals for the tiffins. Here is a recipe that is not only very quick to prepare, it is also full of healthy nutrients your body needs. The best thing about this dish is that it is very flexible and you can change the ingredients to give it a makeover every day!

Healthy Egg Salad for Lunch

You start with a couple of hard  boiled eggs. It is completely your wish how any you are comfortable eating. Let's say you use 2 whole eggs and 2 egg whites. You can increase or decrease either type.

Mash  the boiled whole eggs in a big bowl with a fork. Now start adding in the other components. You can use ingredients like tomatoes, boiled broccoli, avocado, greens like palak, roasted onions, roasted garlic, celery, croutons, dill, mint or coriander etc, along with the remaining egg whites broken roughly. The best thing about this dish is that you can use any ingredient that you would like to add to your salad.

To add a little taste, season your salad with salt and pepper. Add some lemon juice and mustard sauce to give it a little kick.

Your egg salad is ready! You can eat it as a stand alone dish, or pair it up with some bread. Enjoy!
