It is very easy to lose a few kilos in the summer by eating fresh fruit and salads. But it becomes very difficult to achieve similar results in winters. For one, your body needs more calories in the lean months. Also, during the winters it seems hard to eat fruit and salad as you enjoy eating warm foods more when the temperature is low. So how does one make healthy food choices in the winter?
Stews are a popular comfort food in cold climates as they are warm and very nourishing. If you have not tried making a stew yet, here is an easy recipe you should try. This is a one dish meal, serve it with bread or a side of rice/noodles if your family really craves some carbs.
Ingredients: Onions, ginger, garlic, assorted vegetables, tomatoes, mushrooms, flour, boiled chickpeas or kidney beans (optional), salt, pepper and oil.
Start by heating a little oil in a large pan. Add crushed ginger and garlic, saute for two minutes. Add chopped onions and stir fry for another 3-4 minutes.
Now add all your vegetables, mushrooms and chickpeas or kidney beans. Mix well and keep frying for a few minutes. Stir occasionally so that the vegetables do not stick to the pan.
Add salt and other seasoning and tomatoes. Keep stirring on low heat for another couple of minutes.
Now mix the flour in 1/2 cup water and add the mixture to the pan. Stir well and allow the stew to cook for 35-40 minutes on low heat.
Garnish with fresh coriander and serve hot with bread, pasta or rice. If you are trying to lose weight, enjoy the stew without any side of carbs.
