Dhokhla is probably the most famous and loved Gujarati dish. It is very light on the stomach, can be eaten chilled, and is healthy too. These reasons make Dhokla a well loved dish for the hot Indian summers. You can make Dhokla healthier by making it yourselves at home with perfect hygience and good ingredients.
Besan, 1.5 cups
Suji, 2 tsp
Eno, 2 tsp
Juice of 1 lemon
Sugar, 1/2 tsp
Mustard Seeds, 1 tsp
Green Chillies, 3-4
Salt, to taste
Fresh Coriander, for garnishing
Oil, 1 tbsp
Heat 1/2 cup water in a pressure cooker and place a sieve on it.
Take a container that can be placed upon the sieve in the cooker. Grease this container well.
Mix the besan and suji in 1 cup water. Add Eno powder and salt to it.
Quickly ur this mixture into the greased container.
Place the container in the cooker and cover the cooker to allow steaming. Do not put the whistle on the lid.
Let the mixture to steam for 15-17 minutes. Remove from the flame and allow to cool.
Now cut into pieces and place in a tray.
Prepare the tampering with oil, mustard seed and green chillies. Pour it over the Dhoklas.
Now put the sugar, lemon juice and 2 cups of water in a container. Place the dhoklas in it. Remove the excess water after 5 minutes. Garnish with fresh coriander leaves.
