We have all been through evenings when hubby brings along an unannounced guest for dinner. Sometimes relatives just drop in for a visit around dinner time. And sometimes, your friends who came in the evening just stay on till dinner time. What do you do in such situations?

Many women are really great hostesses and never fear unannounced guests. But there are some women who have had much less practice and experience with guests. This article is for them. Here are a few dinner ideas and tips that will help you in fixing a dinner in no time at all!

Vegetables: If you frequently expect guests for dinner, or like to live it up yourself with fancy dinners, you must have vegetables in your fridge. Vegetables can see you through tricky times in many ways. You can make soups, salads, pastas pulavs and biryanis, only if you have assorted vegetables to use. So make it a point to stock up on vegetables every week. The bonus is that they are extremely good for your health, even if you do not have any guests.

Boondi: An Indian dinner is incomplete without a “Raita”. While you have a variety of options like boiled potatoes, cucumber, mixed vegetables, pineapple etc, the easiest to make is definitely “boondi raita”. It is fancier than onion-tomato and easier than “Dahi bhalla”. It is so easy in fact, that all you need to do is have the “boondi” in your cupboard.

Basic Groceries: It is a good idea to have the basic groceries stocked up always. Onions, potatoes and tomatoes should never be missing from your kitchen. Similarly, you should do regular checks to ensure you have stuff like pasta and rice stocked up.

Drinks: If you or your friends are into alcoholic drinks, make sure you always have some spirits handy. More importantly, you should always have unopened sodas (if you do indulge) in 1 l bottles, squashes, juices, tea and coffee.

Friendly Shopkeeper: You should always have at least one shopkeeper near your home, who will deliver stuff within 5 minutes of receiving a phone call. You can order things like eggs, sodas, paneer, biscuits etc if you have run out of them.

These are a few things you should have handy if you expect unexpected guests. What an irony! In our next article in the series, we will bring you a few quick fix recipes that will make you an instant hit with your guests. Voila!
