There is increasing awareness about different cuisines and new cooking styles everywhere. One of the cuisines that is fast gaining popularity in our country is the Mediterranian, which is also said to be the healthiest food. Almost everyone knows how to make Pizza at home, few know their pasta too. But Lasagna is an item that looks scary and difficult to manage. But the truth is that it is pretty easy once you get the hang of it!

Lasagna Recipe

Ingredients

Assorted Vegetables, julienned (Bell peppers, zucchini, squash etc)

5 Large Tomatoes

1 Cup Chopped Mushrooms

2 Onions, Chopped 

5 Cloves of Garlic, chopped finely

Tomato Puree

1 Cup Paneer

1 Cup Mozarella Cheese

1/2 Cup Parmesan

1 Cup Vegetable Stock

Various Herbs and Spices

Olive Oil

Lasagna Noodles, Cooked 

Salt

1 Egg

Method

-In a saucepan, saute the garlic and onions in a little olive oil. Add the assorted vegetables and mushrooms after a minute. Cook for a couple of minutes, then add the tomato puree, stock, salt and your choice of herbs/spices. Now reduce heat and cook this for 20-25 minutes into a thick sauce like consistency.
-As your sauce cooks, mix the egg and paneer in a bowl. 
Now start layering your lasagna. Start with a layer of vegetable sauce. Cover with a layer of the cooked pasta. Make the third layer from your paneer-egg mixture. Repeat these layers once more. Top with remaining sauce and paneer mixture.
-Sprinkle your parmesan and mozarella on the top. Now bake for 30-35 minutes at 350 degrees. Allow it to cool down for 5 minutes before you start cutting your lasagna.
