It is these little pleasures of life that make it worth living. Vada pav, chai and rain is a classic combination that almost everyone in Mumbai swears by. So Memsaab brings you a neat little recipe so that you can create this yummy snack at home for your family.
Mumbai Vada Pav Recipe
Ingredients
4 Pavs (to serve 4)
Dry Garlic chutney (Optional)
Green chutney (Optional)
2 large potatoes, boiled and mashed
4 Green chillies, 2 chopped and 2 fried
1 Tbsp Ginger Garlic paste
1 Tsp Mustard Seeds
1/2 Tsp Hing
4-5 Curry leaves
Turmeric, Salt, Spices to taste
Oil for frying
3/4 Cup Besan
Method
1. In a frying pan, heat a little oil and add the mustard seeds. When the seeds crackle, add the curry leaves and the ginger garlic paste. Fry for a minute and then add the salt/spices and mashed potatoes. Stir well and cook for 2-3 minutes.
2. Now make 4 balls out of this mixture.
3. Prepare the besan batter by adding a little water and salt/spices to the besan. After all the lumps are gone, dip the balls in this batter and deep fry to a golden brown colour.
4. Slit each pav in the middle with a sharp knife. Apply the chutney of your choice on the insides of the pav and place a vada within each pav. Serve with extra chutney and fried green chillies.
